Frankie Cooks: Veggie Stir Fry

In this episode I show you how to make a wonderful stir fry without adding any goopy sauces. Instead, make your own with nothing other than a few tablespoons of soy sauce.
Ingredients
(serves 2)
1 Baby Bok Choy
1/2 an onion
a big handful of cilantro: finely chopped stems, whole leaves
shiitake mushrooms, or button, or both (about a carton)
1 yellow pepper, deseeded, or 1 carrot
5 tablespoons of soy sauce
a 2" by 1" by 1" rectangle of ginger, sliced thin
1 clove of garlic sliced thin
1 jalapeño
Asian stir fry noodles or ramen noodles

Frankie cooks: Knife Skills

In this episode I demonstrate to DL (of A Brief Smile) how easy it is to properly use a chef's knife. After mastering the "kung fu grip" and the "Choo choo train rolling technique" DL was able to use his knife blind folded as if he were playing guitar! You too can learn how to properly use your knife, in under three minutes.

Frankie cooks: Spring Eggplant Pesto

In this episode, Frankie combines a few things he learned on his last trip to Italy, and creates a wonderful refreshing spring eggplant pesto pasta.
Instructions for Frankie's Eggplant Pesto:
Broil eggplant, as many or as few as you like, cut in half lengthwise and placed skin side up, as close to the broiler as you can get them. Do not be afraid, there will be smoke, and this is desirable as it adds a smokey taste. Let them cool once cooked sufficiently. . . . .

Frankie Cooks: Banana Bread

The ladies of YAH seem to think I am incapable of baking, and can only cook. Here, I prove them wrong. In this episode, I bake Jena's grandmother's banana bread. The recipe is as follows:
Grandma's Banana Bread
2 eggs
1 cup sugar
1/2 cup butter (one stick unsalted)
1 1/2 cup flour
1 tsp salt
1 tsp baking soda
1 cup mashed bananas (2 or 3)
1/2 cup sour cream
1 tsp vanilla
Mix butter and sugar, add eggs, add dry ingredients to the butter and sugar and blend well, add the bananas, sour cream, vanilla, stir well. Pour into greased 9x5x3 loaf pan. Bake 1 hour at 350 degrees.
