Grandma's Cucumber Salad

A few weeks ago my family hosted a party in honor of my cousin's college graduation. Rather than cater the 50+ person affair, my grandmother decided to cook everything herself. I took a train to Philadelphia early to help her out (and steal some recipes). CONT'D
Aside from a few trays of raw vegetables, cheeses, and dips, the menu included baked salmon with lemons, grilled turkey breast, tortellini with a chunky, spicy tomato sauce, a number of sides, and seven or eight homemade cakes including my grandmother's world famous carrot cake. But my favorite dish of the night, and one that lived a very short life on the buffet table, was a simple cucumber salad that she's been making for over 50 years. Light and refreshing, it's no wonder this dish hasn't gone out of style. Immediately after I returned to New York, I made a gigantic batch of the stuff and have been bringing it to work as an afternoon snack. Enjoy!
Arlene's CUCUMBER SALAD (10 people)
3 large cucumbers
2 tsp salt
4 tbls lemon juice
1 tbsp oil
1 tbsp sugar
2 tbsp chopped dill
1/2 cup thinly sliced red onion
Toss cucumbers with salt. Cover with plate on cucumbers, put 1 pound on for weight. 1-2 hours later drain in colander, rinse, combining all ingredients and refrigerate overnight.
