Savoir Adore's Apple Roasted Chicken

We've been playing Savoir Adore's newest record, In the Wooded Forest, over and over again. The album is almost as addictive as these Red Hot Blue Chips. The sound is a mix of 80's inspired indie-pop, with unashamed nods to the The Smiths and MGMT. The band will be playing a pre-holiday party at Cameo this Friday, December 18th. To go along with the holiday cheer... Savoir Adore shared a secret family recipe with us. The apple roasted chicken dinner is simple and seasonal. Give it a go.
Savoir Adore's Apple Roasted Chicken
Ingredients
Butter
1 Vidalia Onion
1 Apple
Salt, Pepper, Thyme
1 whole chicken
Directions
Grease your roasting pan with 1/4 stick butter
Fill the pan with a 1/2 inch of water
add 2 sliced apples to the pan
1/2 vidalia onion, chopped coarsely
Rub the inside of your chicken with coarse salt, pepper, and thyme
Stuff with 1/2 vidalia onion and one more apple, chopped.
Cook the chicken upside down for 45 minutes at 375 degrees.
Flip the chicken.
Baste with butter and cook for 45 minutes at 400 degrees.
