Frankie Cooks: Filet of Sole, the Musical

I love music. I love cooking. I've decided to combine my two interests. In this episode, I present to you the first of many Frankie Cooks music videos.
Frankie's delicate fish rub (for one filet):
one part cinnamon
one part fennel pollen (available for purchase here)
eight parts Panko
eight parts Italian bread crumb
1/2 tbsp olive oil
1/2 tbsp butter
salt to taste
Directions:
Add butter and olive oil to a sauce pan at medium heat. Coat the filet of sole in the rub. When the pan is hot, place the rubbed fish in the pan. Cook until you see the first side has browned, and then flip. Plate once the second side is browned. Grate lemon zest. Enjoy!
